Green lentils can be used instead of chick peas

Recipe Ingredients for Congee - Vegetable, chick pea, rice

1 cup rice
3 leeks
1 cup chick peas
2 carrots
400 g tomatoes
1 tbsp sesame seed oil

Recipe Directions for Congee - Vegetable, chick pea, rice

  1. Cook rice in a rice cooker - 1 mug to 5 of water - this takes about 3 hours - set to congee

  2. Soak chick peas overnight and boil rapidly for 10 minutes

  3. 1 hour in to cooking add chick peas to the rice cooker

  4. Prepare vegetables, boil on stove for 10 minutes

  5. Once congee is ready, add in vegetables, season to taste with toasted sesame seed oil
