Recipe Ingredients for Confetti-Stuffed Portabello Mushroom

1/4 cup Ricotta Cheese
1/4 cup reduced fat feta cheese
1/4 cup shredded 2% mozzarella cheese
1/4 cup chopped fresh basil leaves
1/4 cup Peppers, Sweet, Red
28 g Portabello Mushroom
1/4 tsp. sea salt
1/4 tsp. white pepper
1 tsp. olive oil

Recipe Directions for Confetti-Stuffed Portabello Mushroom

Mix all ingredients except olive oil and mushroom in a medium bowl. Add mixture to top of mushroom. Drizzle 1 tsp. of olive oil over top of mixture. Place mushroom in lightly sprayed baking pan with 1/2" of water. Bake at 425 degrees for 30 - 35 minutes or until lightly brown on top.
