Recipe Ingredients for Confetti Sloppy Joes

33 lbs. extra lean ground beef
28 green bell pepper, diced
28 red bell pepper, diced
28 yellow bell pepper, diced
28 onion, diced
2 cups white vinegar
25 cups catsup
4 cups mustard
200 whole wheat hamburger buns
30 sweet potato
10 lbs parsnips
50 carrot
30 potato
4 cups extra virgin olive oil
80 oz. low-fat yogurt
20 tbs cucumber, minced
20 tbs green onion, minced
10 tbs parsley
3 tbs chili sauce
1 1/2 tsp garlic powder

Recipe Directions for Confetti Sloppy Joes

  1. Sloppy Joes: Combine beef, peppers and onion and cook until beef is thoroughly cooked; 8-10 minutes

  2. Mix vinegar, mustard and catsup together and add to beef mixture;simmer 10-15 minutes.

  3. scoop one portion on to each bun

  4. Roasted vegetables: cut vegetabes into sticks and coat with olive oil. place in rasting pan and rast 40-50 minutes or until tender.

  5. Yogurt dipping sauce:Combine all ingredients and mix well
