Recipe Ingredients for Confetti Quinoa

1 cup quinoa, rinsed well and drained
2 cups vegetable broth
1/4 tsp salt
1 onion, diced
1 bell pepper, diced
1 tbsp olive oil

Recipe Directions for Confetti Quinoa

  1. Bring water to boil; add salt. Add quinoa; reduce heat then cover and simmer 15 minutes or until water is absorbed.

  2. Saute onion and bell pepper in olive oil. Add to cooked quinoa.
