Recipe Ingredients for Confetti Omelet

1 large Onion, diced
1/2 cup Carrot, diced
3/4 cup Red Pepper, diced
3/4 cup Green Pepper, diced
6 eggs
1/4 cup Milk, Lowfat, Fluid, 1% Milkfat
1 tsp Oregano
1 spray Olive oil

Recipe Directions for Confetti Omelet

  1. Diced up the vegetables

  2. Spray a pan with Olive Oil and fry the onions until slightly browned

  3. Add carrot and cook up until tender

  4. Repeat with peppers.

  5. While vegetables are cooking mix eggs, milk and seasonings together.

  6. At this point you can either add the entire egg mixture to pan and cook until top is firm and bottom starts to brown or you can cut the veggies and egg mixture into thirds and make three separate batches.

  7. Place a plate over the top of the pan and flip the omelet over then return to pan for a minute so both sides brown.

  8. If made as a whole cut omelet into thirds and serve hot.
