Mexican type meatloaf from Prevention cookbook

Recipe Ingredients for Confetti Meatloaf

1/2 cup brown rice
1 tbsp olive oil
1 small onion, chopped
1/2 cup red pepper, chopped
1/2 cup green pepper, chopped
1 lb lean ground beef
1 cup salsa
1 large egg
3/4 tsp salt
1/2 tsp black pepper
1/4 tsp celery seeds
1/2 tsp cumin
1/2 tsp chili powder

Recipe Directions for Confetti Meatloaf

  1. Cook rice according to package directions. (For extra flavor, cook using vegetable broth instead of water).

  2. Preheat oven to 350 F.

  3. Warm oil in small skillet over medium heat. Add onion and bell peppers. Cook 5 minutes or until tender.

  4. In large bowl, combine meat, salsa, egg, celery seeds, and spices. Stir in vegetables and rice.

  5. Form mixture into oblong mound in round baking dish, or put into loaf pan.

  6. Bake 45 to 50 minutes or until thermometer inserted into center read 160 F and meat is not longer pink.

  7. NOTE: use ground turkey to reduce fat and cals; increase servings to 6 to reduce cals further.
