Makes enough for 3 x 600ml lunches. Keeps well for up to 24 hours. Note: A touch of spice can be introduced with the addition of a tablespoon of Thai Sweet Chilli Sauce.

Recipe Ingredients for Confetti Macaroni

1 cup (125g) macaroni
1 cup mixed vegetables, finely diced (such as carrot, corn, capsicum, etc)

Dressing:
4 tbsp light olive oil
1 tbsp white vinegar
1 tomato, large diced
2 tsp honey

Recipe Directions for Confetti Macaroni

  1. Heat a large pot of water with a pinch of salt, add the macaroni, stir and cook 2 minutes.

  2. Add the vegetables.

  3. Cook until the macaroni is tender, and the vegetables cooked.

  4. Drain.

  5. Mix the dressing ingredients.

  6. While the macaroni and vegetables are still warm, mix in dressing.

  7. Let cool completely and refrigerate until required.
