Recipe Ingredients for confetti fried potatoes

2 large red potatoes
1/2 large onion, chopped
1/2 red bell pepper, chopped
1 medium carrot, chopped
1 cup fresh spinach, chopped
2 ounces 90% lean ground beef
1 tablespoon garlic powder
2 tsp dried dill
1 black pepper to taste
1 1/2 tbsp olive oil

Recipe Directions for confetti fried potatoes

  1. heat a medium skillet to medium high with the olive oil. Cut the potatoes how you like them and add them to the heated pan (I like mine diced) with the carrots.

  2. When the potatoes are about half done (firm but not crisp), crumble the ground beef into the pan and add the seasonings, the onions and the peppers.

  3. When everything is done cooking, stir in the spinach, cover and turn off the heat. Let sit about 5 minutes on the cooling burner. Serve hot
