This is a colorful chicken salad with a HUGE protein punch! If it's a bit too high in calories, simply divide the recipe in half.

Recipe Ingredients for Confetti Chicken Salad

6 oz. Chicken Breast (boneless, skinless)
1 T Light Mayo
1/2 T Mustard (spicy brown)
1 T Sweet Relish
2 Egg Whites (boiled)
1 T Onion
1 T Red Pepper
1 T Green Pepper
1 T Celery
1 t Lemon Juice

Recipe Directions for Confetti Chicken Salad

  1. **You will need a food processor for this recipe!**

  2. Set medium pot of water to boil and preheat oven to 350 degrees.

  3. Once the water begins to boil, gently place 2 eggs in the water for about twenty minutes.

  4. Once oven is preheated, insert and bake 6oz chicken breast for about 20 minutes (chicken is done when the thickest part of the breast is no longer pink inside).

  5. When the eggs are finished boiling, rinse the eggs in cold water for 5 minutes.

  6. Remove the egg shells, cut remaining in half and take out the boiled yoke (you will not use the yoke in this recipe.)

  7. Cut baked chicken into 1 inch cubes and set aside.

  8. Chop onions, peppers, and celery into small piece, but do not dice them completely.

  9. Place the boiled egg whites, baked chicken, and chopped vegetables into a food processor.

  10. Add in light mayo, sweet relish, and lemon juice.

  11. Run to food processor in short bursts until the mixture begins to look like couscous or "confetti."

  12. **I've used this mixture on buns, crackers, raw veggies and in stuffed peppers.**
