Serve warm or cold. The sauce can be eaten on its own or it can be served as a topping on other food, such as cake, ice cream, pancakes, and waffles.

Recipe Ingredients for Compote, Rhubarb Ginger

450 g rhubarb, 1 lbs
1/3 cup water
1 tbsp ginger, fresh, minced (or grated, or a 1/2 tsp ground)
1/4 cup sugar, (50 g)
1/4 teaspoon vanilla

Recipe Directions for Compote, Rhubarb Ginger

  1. Trim the rhubarb of the green leaves and ends. Cut into 3/4 to 1 inch pieces. If the stalks are really bug cut them in half first.

  2. Combine water, rhubarb and ginger in a sauce pan and bring to a boil.

  3. Add sugar and vanilla and simmer until pulpy and thickened. About 5-7 minutes. Taste, you may want to add more sugar, I like it tart.
