Recipe Ingredients for Comfort Noodles

3 eggs
2 zucchini
1 tbs butter
3 tbs almond meal
1 tbs grated parmesan

Recipe Directions for Comfort Noodles

  1. turn zucchini into "noodles" using either veg peeler or spiral slicer

  2. sweat for 10 min w salt

  3. add butter and garlic (i clove minced) to pan, sautee until fragrant

  4. add zucchini noodles and cook ew minutes, push to side

  5. add eggs to pan and cook until just starting to set

  6. add zucchini noodles back in

  7. serve w toasted almond meal and parm on top
