Recipe Ingredients for Comfort chicken

2 tbsp Vegetable Oil, Canola
1 large Onions
4 stalk, medium (7-1/2" - 8" long) Celery
4 carrot (7-1/2") Carrots
2 leek Leeks, (Bulb And Lower Leaf-portion)
6 Serving Chicken
4 cup sliced Mushrooms, Brown, Italian, Or Crimini
3 Cube Chicken Stock Cubes
8 tbsp Whipping Cream Lite 18%
36 oz Potatoes, White, Flesh And Skin, Baked

Recipe Directions for Comfort chicken

  1. Heat oil in french oven, med heat.Add onion celerycarrotts and leeks and fry until they begin to brown. use slotted spoon to lift out vegetables, draining them well, use the upturned lid as a holding dish.

  2. Add chicken pieces to the oil, and brown on all sides. Remove chicken from pan.

  3. Preheat oven to 275 F degrees. Put half the vegetables in the french oven and cover with 3 chiicken pieces. Add the mushrooms in a thick layer, add 2 TBSP parsley and season to taste. Repeat these layers with the remaining vegetables and chicken, pour in hot stock and cream.

  4. Arrang closely overlapping potato slices over the chicken pieces, brush with butter, and season lightly. Cover with the lid and cook in heated oven for 2 1/2 to 3 hours. Uncover the last 20 minutes to brown the potato topping.
