I used blue potatoes for extra color and because they are fairly waxy, but any good waxy potato (like Yukon Gold or fingerling) will do. With the beets, this is going to be pretty colorful anyway! ;-)

Recipe Ingredients for Colorful Potato-Beet Salad

20 oz Potatoes
10 oz Beets
2 large Eggs, Whole
3/4 cup Peas, Green
1/2 cup, diced Celery
1/2 medium raw Bell Pepper Red
3 medium (4-1/8" long) Onions, Spring Or Scallions
4 tbsp Nonfat Sour Cream
2 tbs Low Fat Mayonnaise Dressing
1/5 cup Cultured Fat Free Buttermilk
1 serving Rice Vinegar
1 tsp Dill Weed, Dried
1 teaspoon Mustard
1 serving Marie Sharp's Grapefruit Pulp Habanero Pepper Sauce
1/2 tsp Pepper, Black
1 tsp Celery Salt
1/2 packet SPLENDA No Calorie

Recipe Directions for Colorful Potato-Beet Salad

Dice and cook potatoes until just done -- try not to overcook them. Rinse with cold water. Similarly, cook beets and peas until just done (unless using canned beets or frozen peas). Dice celery, scallions, and red bell pepper. Put all vegetables in large bowl. In a separate small bowl, blend the sour cream, mayo, vinegar, and all the seasonings. Adjust seasonings to suit palate. Pour mixture over the vegetables and mix carefully with a large spatula, trying not to mash up the potatoes or beets. Chill for several hours before serv ing. Makes six large or eight small servings.
