Gluten free, can easily be dairy free

Recipe Ingredients for Colorful Fritatta

1 cup broccoli florets
3/4 cup fresh sliced mushrooms
2 green onions, chopped fine
1/4 tsp garlic salt
1 1/2 cup shredded cheese
8 eggs
1/4 cup water
1/4 cup Dijon mustard
1/2 tsp Italian seasoning
1 tbsp butter
1 cup ham (cubed)
1/2 cup chopped tomatoes

Recipe Directions for Colorful Fritatta

  1. In a large skillet, saute broccoli, mushrooms and onion in butter until tender. Add Ham. Remove from heat and keep warm.

  2. In a mixing bowl beat eggs, water, mustard, Italian seasoning and garlic salt until foamy. Stir in cheese, tomatoes and broccoli. Mix.

  3. Pour into greased shallow 1 1/2 qt baking dish. Bake at 375 for 22-27 min or until knife inserted in center comes out clean.
