Colorful, tasty corn salad (originally published in Taste of Home Magazine, August/September 1999). The seasonings add a bold, refreshing Southwestern flavor that brings people back for seconds!

Recipe Ingredients for Colorful Corn Salad

20 oz. frozen corn, thawed
2 c. green pepper, diced
2 c. red pepper, diced
2 c. celery, diced
1 c. parsley, minced fresh
1 c. green onion, chopped
1/2 c. shredded parmesan cheese
2 t. ground cumin
1 1/2 t. salt
3/4 t. pepper
1/2 t. hot sauce (like Cholula, Tabasco, etc.)
1/8 t. cayenne pepper
3 T. olive oil
2 garlic cloves, minced
6 T. lime juice

Recipe Directions for Colorful Corn Salad

  1. In large bowl, combine the first 12 ingredients.

  2. In a microwave-safe dish, combine oil and garlic. Microwave uncovered, on high for 1 minute. Cool. Whisk in lime juice. Pour over the corn mixture and toss to coat.

  3. Cover and refrigerate until serving.
