Recipe Ingredients for Colorful Chicken Stir Fry

2 cups rice or Ramen Noodles
2 tbls Canola Oil
8 oz chicken breasts, sliced (long pieces)
1/4 red onion, sliced (long pieces)
1/2 red bell pepper, sliced (long pieces)
1/2 green bell pepper, sliced (long pieces)
1/2 yellow bell pepper, sliced (long pieces)
1 cup broccoli, chopped
4 mushrooms, sliced
1/2 cup chicken broth
3 tbls soy sauce
1 tbls rice vinegar
1 tbls corn starch
2 garlic cloves, minced
1 tsp ginger root, minced

Recipe Directions for Colorful Chicken Stir Fry

  1. Warm the Cooking Oil in large fry pan or Wok

  2. Mix Soy sauce, rice vinegar, and chicken broth

  3. Add Garlic and Ginger until fragrant (about 10 seconds)

  4. Add the chicken and cook evenly

  5. Add mushrooms and onions and cook until onions are somewhat clear

  6. Add Broccoli and bell pepper and cook until broccoli is warm but still crisp

  7. Add the sauce and cook until bubbly

  8. Mix corn starch in 1/4 cup water

  9. Add mixture to sauce to thicken

  10. Simmer until ready to serve
