Recipe Ingredients for Colorful Baked Vegetables

2 beets (2" dia, sphere) Beets
0.5 broccoflower Broccoflower
8 oz Sweet Potato
1.5 cup Brussels Sprouts
2 1tsp Grapeseed Oil

Recipe Directions for Colorful Baked Vegetables

Peel and cut vegetable into large chunks. Place in baking pan, drizzle with grapeseed oil and stir to coat vegetables. If you use beets you might want to keep them a little separate as they dye everything else. Sprinkle with salt and pepper if desired. Bake uncovered at 350 degrees F about 45 minute
