A version of Shepherd's Pie that incorporates southwestern flavors. Recipe is for filling without crust.

Recipe Ingredients for Colorado Shepherd's Pie Filling

3 c potatoes, diced
1 c Onion, diced
1 c Carrot, Diced
1 lb Ground Beef, Lean
1/4 c Flour
2/3 cup Bell Pepper, diced
1 tbsp Extra Virgin Olive Oil
15 oz Corn, Canned
8 1/2 oz Ro-Tel
2 tbsp Garlic Salt
1 tbsp Salt
1 tbsp coriander
2 tbsp basil

Recipe Directions for Colorado Shepherd's Pie Filling

  1. Heat oil on stock pot to medium high

  2. Add Onions and Garlic Salt and sautee to opacity.

  3. Season Ground Beef with coriander, garlic salt, salt, paprika, and basil

  4. Add beef to pan and cook to a medium temperature.

  5. Remove meat and onion from pan.

  6. Combine all remaining ingredients into a large mixing bowl, dash with oil and toss to evenly coat.

  7. Add to stock pot with 1/4 cup of Ro-Tel juice to retain moisture.

  8. Cook until potatoes/carrots are al dente and corn has begun to carmelize, stirring often.

  9. Re add meat and flour, allow to simmer for app. 3 - 4 minutes and remove from heat.
