Serve with Spanish rice. Add cumin if desired. The seeds of the chilis add the heat. Test a seed in the chilis that you are adding and then subract seeds from the chilis to get your desired heat index in the finished dish.

Recipe Ingredients for Colorado Green Chili

1 1/2 lbs. pork, cubed
1 tbsp. minced garlic (about 2 cloves)
1/4 tsp pepper
1 1/2 tbsp. flour
1 tbsp garlic, minced (scant)
1 1/2 cups diced fresh tomatoes
1 cup chicken broth
1/2 cup water
1 3/4 cups diced green chiles (about 15 chiles)
1 cups diced onion

Recipe Directions for Colorado Green Chili

  1. Brown pork in skillet with garlic and pepper. Add flour and brown as well.

  2. In crock pot, mix pork, garlic, tomatoes, water, green chiles and onion. Simmer for at least 2 hours. Water can be added to thin down and flour can be added to thicken.

  3. (You can also cook it in a large pot on the stove at low heat.)

  4. Hint: Let simmer at least an hour before tasting and modifying by adding chiles, more tomatoes, garlic, etc.
