This needed more tomato action, so I bought a can of bruschetta and add about 2 tablespoons over my serving of lasagna before heating it up. SO good! Ends up being very sweet with the red peppers, and I think the bruschetta I bought was pretty sweet as well. I basically just used what I had in the fridge. I only had half an onion, so I just used half. I don't know how good this is compared to other vegan lasagnas. But, I liked it! And the mushrooms I used were portobello, it's not accepting that. There are probably better Vegan lasagnas, or at least ones that use the tofu better. All the recipes I looked at required a food processor, or other things I didn't have. SO this is the college-student version.

Recipe Ingredients for College-Student Vegan Lasagna

1/2 chopped yellow onion
1 chopped red bell pepper
1 sliced zucchini
1 tablespoon olive oil
2 cups sliced mushrooms
12 3/10 ounces silken tofu
10 ounce whole wheat lasagna noodles
1/2 cup tvp
24 ounces Marinara Sauce
3 cloves minced garlic

Recipe Directions for College-Student Vegan Lasagna

  1. Preheat oven to 350

  2. Prepare noodles according to package (if you gotta boil them, once the water starts boiling, you can snatch some up to hydrate the TVP)

  3. Saute onions and garlic in olive oil

  4. Once onions are transparent, add in peppers, mushrooms, hydrated TVP and zucchini.

  5. Let cook for a bit, and add in your Marinara sauce.

  6. Later sliced tofu first. Then 3 lasagna noodles, then marinara mixture. Repeat until out of ingredients. Sprinkle with basil when finished.
