Recipe Ingredients for Collards & potato

3 cloves Garlic
10 slices (1" dia) Ginger Root
1 small Onions
4 small (1-3/4" to 2-1/2" dia.) Potatoes, Boiled
3 cup, chopped Collards
2 tbsp Soy Sauce
1 lemon yields Lemon Juice
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/2 cup (not packed) Raisins, Seedless
4 cup Rice, Brown, Medium-grain, Cooked

Recipe Directions for Collards & potato

  1. Saute onion, garlic and ginger root

  2. Add veggies (without tomato) in lemon juice, water and soy sauce. Simmer

  3. Stir in raisins and large diced tomato chunks
