Collards and tomatoes. Toward the end of cooking add red wine vinegar or Tobasco to taste.

Recipe Ingredients for Collard Greens and Tomatoes

2 tsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
28 oz can tomatoes
2 cups vegetable broth
2 tsp marjoram
1 pound collard greens, cleaned and chopped

Recipe Directions for Collard Greens and Tomatoes

Saute onions and garlic in the oil. Add the tomatoes (crush if whole), vegetable broth, and marjoram and bring to a boil. Add salt and pepper to taste. Add the greens and stir until wilted. Cover the pan and cook on low for 35 minutes, stirring occasionally.
