Awesome fiber protein combo - natural vitamins A and C plus calcium as a bonus!

Recipe Ingredients for Collard Greens 'n Beans

5 cups collard greens
2 cups tomatoes
1/2 cup green pepper
1/2 cup red pepper
1/8 tsp salt
2 1/2 oz pinto beans
1 chili powder to taste

Recipe Directions for Collard Greens 'n Beans

  1. add a little water to a 10" skillet, steam/stir fry collards, tomatoes and peppers together, add 1 cup cooked pinto beans towards the end to warm through garnish with cilantro add salt and chili powder to taste

  2. Note: Use 1 cup pre-cooked pinto beans (drain if using canned). I use 2 1/2 oz in the recipe because it pretty well matches the nutritional profile of cooked beans for some reason the analyzer assumes beans will be raw so it way overstates calories etc if you 1 cup in the recipe.
