Recipe Ingredients for Collard Green and Black-Eyed Pea Soup

1 tbs. extra virgin olive oil
1 large onion
2 large carrots
2 stalk celery
1 1/2 tbs. minced garlic
1 1/2 tbs. thyme
1/4 tsp. crushed red pepper
4 cups reduced-sodium chicken broth
15 ounces diced tomatoes
2 cups beans, black eyed
5 cups chopped greens ( Kale or Collard )

Recipe Directions for Collard Green and Black-Eyed Pea Soup

Heat oil in Dutch oven over medium heat. Add onion, garlic, carrot and celery, stirring until just tender, 5 to 7 minutes. Add thyme and red pepper and cook till fragrant about 15 seconds. Increase heat to high and add broth, tomatoes with all juices. Bring to a broil. Stir in greens, reduce heat to maintain a simmer and cook stirring occasionally, until the greens are tender, 5 to 10 minutes. Discard the thyme sprig. Stir in black eyed peas. Remove from heat and keep covered.
