Deliciously healthier potato pancakes.

Recipe Ingredients for Collard Cakes

2 cup Collard Greens
2.3 cup Hashed Browns
2 slices COOKED Center Cut Bacon
1 cup Egg Beaters
1.5 cup, chopped Onions, Spring Or Scallions
0.33 lemon yields Lemon Juice
3 tbsp Olive Oil
1.5 tsp Pepper, Black

Recipe Directions for Collard Cakes

  1. Cook bacon in pan til crispy and drain most of the fat. Crumble bacon and add rest of the ingredients, except for the oil into a bowl. Blend well.

  2. Add a little oil to pan and drop large tbls of mixture into heated pan (aprox med heat), flatten and cook about 5 min each side.

  3. Tastes great with more lemon and or sour cream.
