From Oprah's magazine--this basic dressing or marinade can be dressed up many ways.

Recipe Ingredients for Colin Cowie's Vinaigrette

1/4 cup white wine vinegar
1 tablespoon dijon mustard
1 tablespoon shallots, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper, ground
1 cup olive oil

Recipe Directions for Colin Cowie's Vinaigrette

  1. In a mixing bowl, whisk together the vinegar, mustard, shallots, salt, and pepper.

  2. Slowly whisk in oil.

  3. Options: Add one of the following: 2 canned artichoke hearts plus 1/4 lemon juice and puree; 2 tbsp tomato juice plus a dash of tabasco; 2 tsp honey; 2 ounces of Stilton and puree; 1 tsp orange zest and 2 tbsp fresh orange juice plus 1 tsp crushed red pepper; 2 tbsp chopped parsley, mint, basil, or chives; replace olive oil with 1/4 cup truffle oil and 3/4 cup canola oil.
