This recipe is beautiful, brightly colored and not too sweet

Recipe Ingredients for Coleslaw

3 c green cabbage, shredded
1 c purple cabbage, shredded
1 c carrot, shredded
2 scallions, chopped
1/2 c low fat mayonnaise
2 tsp vinegar
1/4 tsp sugar
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Coleslaw

  1. Mix all the veggies together except scallions.

  2. Mix all other ingredients, adding scallions last.

  3. Mix the dressing into the cabbage mix.

  4. Refrigerate for at least 30 minutes before serving to allow the flavors to mix.
