Coleslaw with a pepper mayonnaise to serve with fresh seafood.

Recipe Ingredients for Coleslaw with a kick

2 cups Cabbage, shredded
1 cup Rocket
1/2 red onion
1/2 cup red capsicum
1/2 cup grated carrot
1 tsp peppercorns, roasted and crushed in mortar
1/2 tsp salt
2 tbsp mayonaise

Recipe Directions for Coleslaw with a kick

  1. Mix cabbage, rocket, finely sliced onion, capsicum and grated carrot in a bowl.

  2. Roast peppercorns in dry frypan on stove until all have "popped".

  3. Allow to cool and crush in mortar and pestle.

  4. Mix pepper and salt into mayonnaise (to taste).
