A light & refreshing alternative to mayonaise-based coleslaw. Great summertime flavor! Best as a make-ahead recipe, the flavors are best after the salad refrigerates overnight.

Recipe Ingredients for Coleslaw with Cumin-Lime Vinaigrette

1/3 cup fresh lime juice
1 1/2 teaspoon ground cumin
3 tbsp garlic, chopped
2 tbsp hot sauce
3/4 cup olive oil
6 cups green cabbage
4 cups red cabbage
2 red bell pepper, julienned
1 large red onion, thinly sliced
1 cup chopped fresh cilantro
1 Salt and pepper

Recipe Directions for Coleslaw with Cumin-Lime Vinaigrette

  1. In a blender, combine lime juice, cumin, garlic, hot sauce, and olive oil. Process until well-blended.

  2. In a large bowl, combine the cabbage, bell peppers, onion, & cilantro (feel free to add other vegetables such as carrot, broccoli, green bell pepper, etc to your liking). Toss vegetables to combine.

  3. Drizzle the vinaigrette over the coleslaw, and toss to coat. You may not need all of the dressing. Salt and pepper to taste.

  4. This salad is best when allowed to sit overnight in the fridge. The flavors are 1,000 times better on the second and third days. Serve chilled.
