Sweet potatoes, nutritional yeast, and kale make this soup beautiful. You don't notice the taste of the kale so it's a good way to get the super healthy winter green into your diet.

Recipe Ingredients for For a Cold Winter Day Soup

2 sweet potato , diced
1 cup scallions, chopped
5 cloves garlic, mined
1 cup kale, cut in ribbons
1/4 cup nutritional yeast
4 ounces cheese, shredded
4 cups vegetable broth
2 cups whole milk
3 tbsp extra virgin olive oil, divided
2 tbsp cider vinegar
1/4 tsp turmeric
1/8 tsp cayenne
1/2 tsp thyme
1/4 tsp garlic powder
1/4 tsp red pepper
1 tsp salt
1/2 tsp onion powder
3 tbsp mustard
1 tsp liquid smoke
1 pepper to taste

Recipe Directions for For a Cold Winter Day Soup

  1. Heat 1st half of oil in large pot. Add scallions and garlic and cook until fragrant. Role kale leaves into thin tubes and slice thinly to make kale ribbons. Add kale and cook until bright green.

  2. Add sweet potatoes and broth and simmer covered until sweet potatoes are tender (10-12 mins)

  3. While potatoes cook, In a measuring cup, add vinegar and milk, stir and allow to sit to curdle milk.

  4. Add seasonings to soup pot. In a separate bowl whisk other 1/2 of oil w/1 tbsp of flour to make a rue, add mustard and nutritional yeast and add to pot.

  5. Mix in the "buttermilk" and cook until thick and creamy throughout. Turn off heat. Add cheese and stir until cheese is melted. Serve.
