Recipe Ingredients for Cold Summer Soup

4 large tomatoes
1 avocado
1/2 cup chopped onion
1/2 cup chopped cilantro
2 tsp fresh lemon juice
1/2 tsp salt
1 tsp pepper
1 1/2 cup water

Recipe Directions for Cold Summer Soup

  1. Dice three tomatoes. Process to juice. Remove any large pieces of skin.

  2. Dice avocado and fourth tomato, add to juiced tomatoes. Add cilantro, onions, lemon juice, salt, pepper and water. Refridgerate. Serve.
