Creamy Spinach, Egg & Cheese Salad

Recipe Ingredients for Cold Spinach Casserole

2 pkg. spinach, chopped, frozen
1/2 cup celery, chopped
1/2 cup onion, chopped
4 eggs, hard boiled, chopped
1 cup cheddar cheese, shredded
1 cup light mayonaise
1/4 cup light mayonaise
1 tsp. white vinegar
1/2 tsp. salt
1/2 tsp. tabasco sauce
2 tsp. horseradish

Recipe Directions for Cold Spinach Casserole

  1. Thaw spinach in refrigerator overnight. Drain in colander, pressing out as much water as possible. Squeeze in paper towel until dry.

  2. Add celery, onion, hard boiled eggs, cheddar cheese.

  3. In separate bowl, mix mayo, vinegar, salt, tabasco and horseradish. Combine with spinach.

  4. NOTE: Do not freeze.
