Nice cool dish for a summer evening meal.

Recipe Ingredients for Cold Shrimp Pasta Salad

8 oz ziti, uncooked
2 tablespoons olive oil
1 cup broccoli
1/2 red pepper
2 cloves garlic
8 oz artichoke hearts, drained
2 med tomatoes, chopped
14 oz shrimp

Recipe Directions for Cold Shrimp Pasta Salad

  1. Cook pasta according to directions on package. Drain immediately and rinse with cold water to stop cooking.

  2. Heat oil in pan. Add garlic, chopped red pepper, any other seasoning desired. Cook 4-5 minutes over medium heat.

  3. Cook broccoli for 2-3 minutes in microwave or steam. Be careful not to overcook.

  4. Using the pre-cooked frozen tail-on shrimp, thaw and remove tails.

  5. Combine all ingredients except tomatoes in large dish. Stir to coat with olive oil and seasoning. Refrigerate 2-3 hours before serving.
