Cold Green Soup Recipe

Makes 4 servings



Add a small amount of oil to a sauce pan. Add chopped onion, garlic, and thawed (fresh) spinach. Stir together until the onions are clear. In the meantime, prepare the chicken broth (I use Better than Boullion). Combine broth, spinach and onion. Bring to a boil. Break apart as soon as possible. Puree in food processor (Blender) until almost completely blended. Should still have some texture. Cool the mixture in the freezer for ~ 20 minutes. Add 2 Cups sour cream to 1/2 of the mixture. (Small amounts at a time to keep hot liquid from curdling the sour cream) Then combine and blend all together. Pour in a soup bowl and add a smidgen of paprika.
