Recipe Ingredients for Cold Curried Buttermilk Soup

1 teaspoon vegetable oil
1/2 cup yellow onion
1/2 cup poblano pepper
1 clove garlic
1 teaspoon ground coriander
1/2 teaspoon cumin
1/8 teaspoon turmeric
4 ears of corn
3 cups low fat buttermilk
3/4 teaspoon kosher salt

Recipe Directions for Cold Curried Buttermilk Soup

  1. Heat oil, onion, chile, garlic; saute about 5 minutes.

  2. Add coriander, cumin, turneric, cook about 2 minutes. Add corn, saute about 5 minutes. Remove and let cool slightly.

  3. Transfer 1 1/2 cups corn mixture to blender, adding buttermilk and salt; puree until smooth. Transfer to large container, cover with plastic wrap and chill until serving.
