Recipe Ingredients for Cold Cucumber-Yogurt Soup

2 cucumbers, medium
1 1/2 cups yogurt, nonfat plain
1/2 tsp salt
1 tsp fresh mint leaves, snipped or 1/4 tsp dried mint leaves
1/8 tsp white pepper

Recipe Directions for Cold Cucumber-Yogurt Soup

  1. Cut 4 thin slices from cucumber; reserve

  2. Cut remaining cucumber into 3/4-inch chunks

  3. Place half of cucumber and 1/4 cup yogurt into blender; blend until smooth

  4. Add remaining cucumber chunks, the salt, mint and pepper; blend until smooth

  5. Cover and place in fridge for 1 hour

  6. garnish with fresh mint leaves, and reserved cucumber
