Cold summer salad. No mayo, lots of tangy flavor.

Recipe Ingredients for Cold California Chicken Veggie Salad

16 ounces cooked chicken breast
1 stalk broccoli, chopped
1/2 cauliflower head, chopped
100 grams baby carrots, chopped
1 large scallion, sliced
4 tbsp lime juice
1/2 tsp pepper, ground fresh
1/4 tsp salt
3 tbsp red onion, diced
3 tbsp red pepper, diced
1 tbsp fresh parsley, minced
1 tbsp cilantro, minced
1 tbsp basil, bruised
1 tsp worcestershire sauce
1 tsp maple syrup

Recipe Directions for Cold California Chicken Veggie Salad

  1. Cooked the chicken. Set aside and allow to cool in a bowl. Do not discard the juices.

  2. Boil or steam the cauliflower, carrots, and broccoli. Strain well and cool.

  3. Slice the chicken into 1/3 inch thick pieces. It's better if you don't chop or dice it.

  4. Pour the worcestershire, maple syrup, lemon juice and chicken juices onto the chicken. Mix gently and allow to soak in juices for a few minutes.

  5. Add cooled veggies and herbs. Gently toss and refrigerate immediately. Tastes better cold after several hours of soaking in juices.
