Recipe Ingredients for Cold Beet Soup

3 beets
4 cups buttermilk
1 cup sour cream
4 scallions
3 hard boiled eggs

Recipe Directions for Cold Beet Soup

  1. cover beets with water and boil until tender reserve liquid

  2. Meanwhile chop scallions

  3. separate egg whites from yolks, mash yolks with chopped scallions chop whites fine

  4. add buttermilk and sour cream to reserved liquid add in chopped whited and scallions

  5. when beets are tender cool then course grate and add to liquid

  6. refrigerate until cold.
