Cold Barley Salad Recipe

Inspired by a recipe I found at: http://www.eatmedelicious.com/2007/08/french-barley-salad.html Good for a hot day, can be made in advance. Should also work with spelt, rice, or wheat berries. Use one red, yellow, or orange pepper fire roasted with skin removed.

Recipe Ingredients for Cold Barley salad

3 tbsp balsamic vinegar
1 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp dijon mustard
2 tsp spring garlic vinagrette
2 clove garlic
1/4 tsp pepper
1 cup barley
240 grams mushrooms
120 grams carrots
70 grams fennel bulb
70 grams onion
120 grams fire roasted pepper
3 tbsp fresh tarragon

Recipe Directions for Cold Barley salad

  1. Rinse barley in strainer, then simmer approx 40 minutes in 3 cups of water.

  2. While barley is cooking, cut mushrooms into 1/4's. Prepare vinagrette from oil, balsamic vineger, dijon mustard, garlic, and 1/2 of tarragon.

  3. Toss mushrooms in 1/2 of vinagrette.

  4. Slice carrots, onion, and fennel bulb in into matchstick (or a little thicker) peices. Blanche

  5. one minute in boiling water and then transfer to water and ice bath. Drain, and dry if needed.

  6. Toss onions, fennel, and carrots with remaining vinagrette.

  7. When barley is cooked (still al dente) put in strainer, rinse under cold water to cool. Let drain well.

  8. Toss barley, mushrooms, and vegetables. Put in fridge to cool well.

  9. Taste, if needed add a little more balsamic vinegar and oil, or a lite bottled italian vinagrette (I used ~2 tsp of Renee's spring garlic, because I had it in the fridge)>
