Good cold side dish salad - goes well with Mexican

Recipe Ingredients for Cold Barley and Black Bean salad

1 1/2 cup can tomatoes
1 1/2 cup black beans
1 cup corn
1/3 cup pearled barley
1 1/2 tbsp olive oil
1 tbsp Cilantro
1 tsp garlic salt

Recipe Directions for Cold Barley and Black Bean salad

Cook pearled barley accd. to package and add olive oil when done, rinse and drain 1 can black beans, drain 1 can diced tomatoes (with chilies if you like it spicy). Then mix cooked barley, beans, tomatoes, corn(can be defrosted frozen, can or cooked), cilantro and garlic (can be garlic salt or minced garlic). Let set for at least an hour - overnight is better and enjoy.
