A perfect cold noodle dish for the warm summer evenings. Even good the next day for lunches.

Recipe Ingredients for Cold Asian Noodles w/Veggies

1/2 lb whole wheat spaghetti
1/2 cup low sodium soy sauce
2 tbsp sesame oil
2 tbsp canola oil
2 tbsp rice wine vinegar
1 tsp crushed red pepper
6 green onions, thinly sliced
1/4 cup cilantro, chopped
1 Peppers, Sweet, Yellow
1 cup red cabbage, thinly sliced
1 cup carrots, shredded
1 cup edamame, cooked

Recipe Directions for Cold Asian Noodles w/Veggies

  1. Cook the noodles, rinse in cold water and drain well. Combine noodles, sweet pepper, cabbage, carrots and edamame in a large bowl.

  2. In a separate bowl combine the soy sauce, oils, vinegar, red pepper, and green onions (feel free to add a minced clove of garlic, some grated fresh ginger, and lime zest if you like). Mix well and pour over noodles and veggies.

  3. Toss well and serve cold.
