Traditional Irish mashed potatoes and cabbage.

Recipe Ingredients for Colconnan

2 lb potato, with skin quartered
2 cups cabbage, chopped
1/4 cup onion, chopped
1/4 cup butter
1/2 cup 2% milk

Recipe Directions for Colconnan

  1. Boil potatoes in salted water for aproximately 10 minutes or until done.

  2. Remove potatoes for water, set aside and reserve potato water in the pot.

  3. Add chopped cabbage to potato water and boil for 5 to 8 minutes until soft.

  4. While cabbage is cooking saute onions in butter. When cabbage is cooked drain water and add cabbage to saute pan with onions.

  5. Mash potatoes, adding milk, and salt and pepper to taste. When smooth stir in cabbage, onion and all the butter.
