Recipe Ingredients for Colcannon for St. Patrick's Day

1 1/2 lbs fingerling potatoes
1/4 head green cabbage
50 grams shallot, chopped
6 slices reduced fat bacon, chopped
1/4 cup apple cider vinegar
1/4 cup whipped cream cheese
1/3 cup Promise light spread
1 tsp salt
2 tsp black pepper, coarse ground
1/2 tsp minced garlic
1/4 cup 1% milk

Recipe Directions for Colcannon for St. Patrick's Day

  1. Boil potatoes until soft. Set aside.

  2. In the potato pot, saute bacon and shallots until bacon is fully cooked.

  3. Steam cabbage in microwave for 4 minutes on HIGH, or until tender.

  4. Mash potatoes over very low heat.

  5. Mix vinegar, cream cheese, Promise, milk, garlic and seasonings into potatoes.

  6. Add bacon, shallots, and cabbage to potatoes. Stir thoroughly.

  7. Serve immediately or refrigerate and eat later. It will taste better after "mellowing" for a couple of hours!
