Traditional Irish recipe with a twist

Recipe Ingredients for Colcannon

3 cup chopped raw Yukon Gold Potatoes
2 cup, chopped Kale
1 onion Yellow Onion
4 tbsp Butter
1 tbsp Extra Virgin Coconut Oil

Recipe Directions for Colcannon

Boil the potatoes until tender. While potatoes are boiling, mince the onion, and heat the coconut oil in a large skillet. Saute onion and kale together until soft. When potatoes are soft, drain all but about 1/4 cup water; mash with the butter and little bit of water. Mix the kale into the mashed potatoes; return to the skillet. Cook over medium heat until crusty on the bottom. Serve hot.
