Mashed potato with kale and scallions

Recipe Ingredients for Colcannon

4 3/4 lb potato
8 T butter
163 g scallion
120 g .5c 100% Lactose Free Fat Free Calcium Fortified Milk
16 oz kale

Recipe Directions for Colcannon

  1. boil potatoes w skins until done

  2. save 2-3 c potato water for later

  3. while potatoes were cooking, boil/steam the chopped kale until tender

  4. drain kale and place potatoes in colander temporarily

  5. in butter, lightly cook scallions and then add milk, cook an additional 1-2 minutes

  6. add in kale and heat together

  7. back in large pot you cooked the potatoes in, mash 1/3 to 1/2 of the potatoes, add 1/3 to 1/2 of the kale mixture and mash together, adding potato water as needed to moisten.

  8. Repeat with remaining potatoes and kale mixture until all incorporated

  9. Serving size is 1/2 c as measured here. You will get about 14c of colcannon.

  10. salt as desired, but sodium not taken into account
