Recipe Ingredients for Colcannon

6 medium potatoes
4 cups cabbage, chopped
2 leeks, sliced
3 tablespoons butter
1/2 cup milk, 2%
1 salt and pepper to taste

Recipe Directions for Colcannon

  1. Preheat oven to 400 degrees.

  2. Peel and dice potatoes. Put in saucepan with water to cover and boil until soft. Drain mash with butter and milk, and season with salt and pepper. Set aside.

  3. Rinse cabbage and put in large saute pan with leeks over medium heat and cook, stirring frequently, until cabbage is mostly cooked but not limp.

  4. Add cabbage mixture to potatoes. Butter casserole dish and spread potatoes in dish. Bake for 15 to 20 minutes.
