Made with kale and Yukon Gold Potatoes (with skins) Inspired by Vegan Yum Yum, but not vegan.

Recipe Ingredients for Colcannon

4 cups Potatoes, chopped in 1 inch cubes
4 cloves Garlic, minced
1 tbs butter
4 cups Kale, washed and chopped
1 tsp Soy Sauce
1/4 cup nonfat milk, warmed
1/2 teaspoon thyme, dried and crumbled

Recipe Directions for Colcannon

  1. Chop your potatoes into small cubes and bring them to a boil in some salted water.

  2. When the potatoes are nearly done melt the butter in a big pot and add the garlic.

  3. Cook just momentarily then add kale and toss well to coat.

  4. Add the soy sauce and cook over medium heat until kale is wilted and reduced in volume.

  5. Cover and keep warm.

  6. Drain the cooked potatoes well and add to the kale in the pot.

  7. Gently mash adding milk and thyme.

  8. Add salt and pepper to taste.
