Mashed potatoes and cabbage - Irish dish

Recipe Ingredients for Colcannon

1 3/4 lb. potatoes, peeled and cubed
4 1/2 oz. bacon (4 slices)
1/2 (small) head of cabbage, chopped
1/3 cup milk
1 onion, chopped

Recipe Directions for Colcannon

  1. Cook potatoes, mash with milk, salt and pepper. Cook bacon; drain, reserve drippings, crumble and set aside. In drippings, saute cabbage and onioin until soft and translucent, about 10 min. Add to mashed potatoes. Serve with butter.

  2. Can use Country Crock 24 oz. mashed potatoes in place of potatoes and milk.
