An absolutely WONDERFUL after dinner treat!

Recipe Ingredients for Cognac Hazelnut Truffles

1/4 cup heavy cream
1 1/2 oz cognac
8 oz bittersweet chocolate
1 tbl hazelnuts
4 tbl butter
4 tbl cocoa powder

Recipe Directions for Cognac Hazelnut Truffles

  1. Break your chocolate into small chunks to it melts easier.

  2. Cut butter into 1 Tbl portions and melt in a small sauce pot.

  3. When butter is half melted, add cream and bring to a very, very low bubble (not quite a boil).

  4. When the butter cream mixture starts to bubble on the edges, add in the chocolate pieces and immediately turn off the heat on your burner.

  5. Stir the butter, cream, and chocolate mixture until the chocolate starts to "shine", then add in your Cognac.

  6. Continue to stir until the consistency is very smooth and glistening.

  7. Transfer hot mixture to a bowl and let cool in your refrigerator until the mixture firms up (about an hour).

  8. Once the mixture is firm, use a small spoon to carve out ball-shaped chunks.

  9. Roll the chunks into small balls, less than an inch in diameter (you should get close to 30 balls).

  10. Roll the balls in the cocoa powder and place coated balls on a sheet of wax paper.

  11. Place finished truffles in the fridge and allow to completely cool.

  12. When ready to serve, let truffles come to room temperature to fully appreciate the rich, robust flavors of the chocolate and Cognac.
