Individual Coffee flavoured cup cakes, without icing. Butter icing will be extra fat and calories

Recipe Ingredients for Coffee and Walnut Sponge Cup Cakes

175 grams egg
175 grams sugar
175 grams margarine
175 grams flour
1/4 teaspoon baking powder
2 teaspoons coffee
2 tablespoons skimmed milk
50 grams chopped walnuts

Recipe Directions for Coffee and Walnut Sponge Cup Cakes

  1. Preheat oven to 180c

  2. Mix the coffee with hot water

  3. Cream margarine with sugar until light adn fluffy

  4. Add eggs one at a time with a tablespoon of flour each time

  5. Add the coffee mix and the roughly chopped walnuts, stir, add the remainder of the flour and mix thoroughly.

  6. Spoon mix into cup cake paper cases

  7. Bake in center of over for 15 mins or until a skewer is clean after inserted and removed or the cakes are golden brown and springy to touch.

  8. Remove, cool on a wire rack

  9. Once the cakes are cold you can ice if you wish.
